This is one of my mom’s favorite soups to make! It’s often referred to as chicken enchilada but there is no enchilada sauce in it just so there is no confusion. It is so filling, it is truly a meal in itself, especially with scooping up the yumminess with Tostitos or crushing the Tostitos chips on top. Cheesy Chicken Soup Recipe
Ingredients
4 cans Cream Of Chicken Soup
1 Can of Mild Rotel Tomatoes (Diced Tomatoes and green Chiles)
NOTE: In this Batch you see in pics I skipped out on the Rotel because my husband doesn’t care for them.Β
2-3 Cooked Chicken breast (You Can Use any kind Of Chicken, Just make sure it’s pre-cooked or you have already cooked it Before Dumping in the slow cooker)
1 cup of Half & Half
2 Cups Milk
1 (16 oz.) Block of Mexican Velveeta Cheese
Bag of Tostito Scoops
Instructions
Dump Everything in the crockpot & Let it Cook 3-4 hours on High. Stir Often. That’s it!
Serve in a bowl and scoop it out with Tostitos chips or crush them on top.

- 1 cup half and half
- 2 cups milk
- 16 oz. Mexican Velveeta Cheese
- 1 bag Tostito scoops
Instructions
