The Best (And Easiest) Chicken Broccoli Cheddar Soup Recipe– a yummy, and I do mean yummy Soup loaded with bites of chicken and broccoli that the whole Family will love!
We make this soup all the time at our house! It’s absolutely delicious. It’s also a great choice for feeding a big family while still remaining on the frugal side. My hubby ate a bowl & I ate a bowl for dinner and still had six Tupperware’s to pack in the fridge. I also found it to be great for packing up those leftovers for my hubby to take to work and quickly pop in the microwave for a fast reheated meal.
The Best Chicken To Use In Chicken Broccoli Cheddar Soup
You can add any chicken you prefer to this recipe. Fresh bought chicken is the best to use in my opinion but I also have used this Tyson brand Chicken that is pretty good. I used it this time as well shown in photos.
Here’s What You’ll Need To Make It!

Ingredients
8 Cups Water
1 Cup Milk
1/4 Cup Heavy Whipping Cream
Chicken Breast (about 1-1.5 lbs. of chicken)
3 Crowns Broccoli
1 tablespoon Garlic Powder
1 teaspoon Season Salt
1 teaspoon Red pepper
16 oz. Mexican Velveeta Cheese
The Easy, No-Fail Directions
In a large pot, Boil 8 cups of water, 1 cup of milk, & 1/4 cup of heavy whipping cream. Meanwhile, cut the stems off the broccoli.
Once The pot starts boiling go ahead and add your chicken and your seasonings (1 tablespoon garlic powder, 1 teaspoon of season salt, & 1 teaspoon red pepper). Stir it up. Let cook for 5 minutes uncovered. Add broccoli. Cook covered for an additional 5 minutes. ( tip: keep an eye on it to make sure it does not overflow & stir occasionally).
Cut the Velveeta block into several thin slivers (this will help it to melt faster).
Stir in Velveeta slivers until completely melted. Once the cheese is melted let it cook uncovered for approx. 15 minutes. Serve in a bowl. Top with shredded cheese.
